Farro

If you like whole grains to eat as a cereal but can't tolerate wheat berries you should give Farro a try. I first did this almost 10 years ago when I discovered that modern wheat eaten as a cereal gave me enough gas to light up a large city. Checked around and found that Farro an ancient form of wheat dating back around 20,000 years is not hybridized unlike modern wheat and did not cause gastric problems. I bought some and tried it and have been eating it ever since. Cooked with plain water…

Boosting flour protein??

Making bread today, but am out of the higher protein bread flour I use for this event. APF 9-12% bread flour 10-14%

Can I add powdered milk to boost the protein levels in all purpose flour as compared to bread flour. Probably no way to get an accurate measure crossover…..

Anyway adding a 1/4cup of powdered milk to the 4cup flour mix…. sugar addition from it will be the unknown…. maybe affect the yeast life path as well…..

Gona be another garlic focaccia run…. will see later
